Soy Sauce Chicken

  1. Cut and remove the neck of the chicken. Include the neck in the broth seasonings.
  2. Broth seasoning: in a big pot, on a medium high heat, mix all the ingredients for broth seasoning. simmer.
  3. Clean the chicken, remove the wishbone. Season lightly. Tuck in the wings. Slit 2 holes near buttock. Tuck the legs in the 2 holes. Using a hook, hook the chicken near the breast.
  4. Soak the chicken in simmering broth seasonings for 2-3 minutes, until skin has coagulated. Hang to let it dry and absorbed the color. Soak again once already dry.  Repeat 4x. At the fourth times, soak the chicken for 45 minutes, 
  5. Hang and dry. Brush with sesame oil.
  6. Check inner temperature of the chicken, it should be 165 c or more.  Cut the chicken into quarter. Then cut into slant rondel 1 inch .
