

- Do the marinade. Just mix all the ingredients for marinade.
- Remove the skin of the pork. Cut into rectangle with 2 inches as width. Put the pork in the marinade. Chill overnight.
- Remove the marinated pork from the chiller, 1 hour before use.
- Transfer the pork in 1/4 hotel pan. Brush with marinade. Oven at 350 F. Turn and baste with marinade every 15 minutes, until inner temperature has reached 155 C.
- Prepare the plum glaze. In a medium pot, add in glucose, water, plum sauce, and sugar. Put on heat until dissolved. Set aside.
- Once the pork is done in the oven. Cool down. Brush with marinade before grilling.
- Grill the pork until with grill mark. Keep on brushing with marinade while grilling.
- Cool down on cooling rack on a tray.
- Brush with plum glaze while still hot.
- Cut the pork in 1/4 inch rondel.
- Glaze with plum glaze.
