Char Sui (Barbecue Pork)

  1. Do the marinade. Just mix all the ingredients for marinade.
  2. Remove the skin of the pork. Cut into rectangle with 2 inches as width. Put the pork in the marinade. Chill overnight.
  3. Remove the marinated pork from the chiller, 1 hour before use.
  4. Transfer the pork in 1/4 hotel pan. Brush with marinade. Oven at 350 F. Turn and baste with marinade every 15 minutes, until inner temperature has reached 155 C.
  5. Prepare the plum glaze. In a medium pot, add in glucose, water, plum sauce, and sugar. Put on heat until dissolved. Set aside.
  6. Once the pork is done in the oven. Cool down. Brush with marinade before grilling.
  7. Grill the pork until with grill mark. Keep on brushing with marinade while grilling.
  8. Cool down on cooling rack on a tray.
  9. Brush with plum glaze while still hot.
  10. Cut the pork in 1/4 inch rondel.
  11. Glaze with plum glaze.
