Fish en Papillote

  1. Cut the marble potato in half. Cook it in boiling water, until it can be pierced easily with fork.
  2. Preheat oven to 400F.
  3. In a bowl, mix lemon juice, salt, pepper, garlic, zest of lemon and chili flakes. Let the garlic be cooked in lemon juice for a while. Then add in the olive oil. Season with salt.
  4. In a separate bowl, mix tomato, capers, cooked marble potato and olive.
  5. Mix the content of the two bowls. Toss.
  6. Season the fish.
  7. Prepare a parchment paper with a shape of a heart. Prepare also a tray with silpat.
  8. In the parchment paper, layer the following from bottom: marble potato, vegetables, fish, and vegetables. 
  9. Enclose the parchment paper, then fold the tip of the parchment paper to seal. Put in the silpat on tray.
  10. Bake for 15 minutes at 400 F.
