  1. Brine chicken in 1L of water, 2% salt, 2%sugar solution for 24-48 hours.
  2. Slice the chicken in 6 parts. Discard the feet part.
  3. Season with garlic powder, chicken powder, turmeric powder and sesame oil. Season with salt, then marinate.
  4. Prepare a rondeau with 1/4 level of oil. Turn on the heat, make the oil reach 350-375 F. 
  5. Prepare egg white in a bowl.
  6. Prepare mixture of cornstarch and flour in a bowl.
  7. Dip the marinated chicken to egg white, then to cornstarch and flour mixture.
  8. Sway the chicken touching the oil with the tip of the chicken irst before dropping to avoid sticking to pan. Deep fry the chicken for 5-7 minutes.
  9. Plate the chicken over a banana leaf, with fried curry leaves as a garnish.

For the side dish, just mix all the ingredients in the garnish.
