
- Brine chicken in 1L of water, 2% salt, 2%sugar solution for 24-48 hours.
- Slice the chicken in 6 parts. Discard the feet part.
- Season with garlic powder, chicken powder, turmeric powder and sesame oil. Season with salt, then marinate.
- Prepare a rondeau with 1/4 level of oil. Turn on the heat, make the oil reach 350-375 F.
- Prepare egg white in a bowl.
- Prepare mixture of cornstarch and flour in a bowl.
- Dip the marinated chicken to egg white, then to cornstarch and flour mixture.
- Sway the chicken touching the oil with the tip of the chicken irst before dropping to avoid sticking to pan. Deep fry the chicken for 5-7 minutes.
- Plate the chicken over a banana leaf, with fried curry leaves as a garnish.
For the side dish, just mix all the ingredients in the garnish.
