Basic Pasta Dough

  1. Wet ingredients: In a bowl, mix egg yolk, egg, olive oil and salt.
  2. In another bowl, make a well in the centre of the flour. Add in the wet ingredients. Knead.  Plastic wrap. Chill.
  3. Flatten in pasta maker.
  4. Gnocci and  ang Garganelli until #4.
  5. Tortelli until #5.
