

- Preheat the oven at 350 F.
- Prepare a 7 inch cake ring. Cover the bottom with foil. Brush the bottom with butter then dust with flour until fully coated. Keep sides clean.
- In a bowl, add egg yolks, orange juice, 100g sugar, orange zest, pinch of salt and almond flour. Mix with spatula.
- In the mixer with whisk attachment, add in egg white and the 25g sugar. Mix until medium stiff peak.
- Using folding technique, mix the first half of the meringue to the batter until fully incorporated. Then add in the last half of meringue until well mixed.
- Transfer the batter in the cake ring.
- Oven at 350 F for 25 minutes, then check doneness with toothpick.
- Cool down.
- Remove the cake from the ring. Flip using two 1/4 hotel pan.
- Put the cross template on top of cake, then sprinkle with powdered sugar. Remove the cross template.
