

Instruction:
- In a big pot, on a medium high heat, add the water. Let it boil.
- In a bowl, mix brown sugar, 2g of salt. Add this in the boiling water, until completed dissolved.
- Add in the bread flour.
- Transfer the dough in mixing bowl. Using mixer with paddle attachment, mix until no lumps is visible.
- Add in the egg yolks, and the egg.
- Scrape once in a while to completely mix the dough.
- Transfer in 1/2 tray pan. Cover with plastic. Rest for 1 hour.
- Put the dough in the 3 layered piping bag with a star tip.
- Soak the scissors in the oil.
- Squeeze 4 inch strips of dough into the hot oil , cut with the scissors, and fry until golden brown. Flip. Start with a moderate heat, then increase it later on.
- In a separate bowl, mix sugar and cinnamon for cinnamon sugar.
- Mix the dark chocolate and whipping cream in a another bowl. Melt it on Bain marie.
- Drain on paper towel. Roll in the cinnamon sugar while it is still hot.
- Serve immediately. Serve with hot chocolate.
