Gising Gising (Wing Bean in Coconut and Chili)

  1. Prepare ice bath.
  2. Blanch the sigarilyas, then soak in ice bath.
  3. Put oil in wok over a medium fire.
  4. Add pork fat and meat.
  5. Season.
  6. Add onions, garlic. Add additional oil.
  7. Lower down the heat.
  8. Add shrimp paste.
  9. Add coconut milk. May deglaze the coconut milk container with stock, then add the deglazed coconut milk in the wok.
  10. Add fish sauce and siling labuyo.
  11. Season
  12. Boil then simmer. Make the sauce with body, not watery.
  13. Add the sigarilyas.
