

- Prepare ice bath.
- Blanch the sigarilyas, then soak in ice bath.
- Put oil in wok over a medium fire.
- Add pork fat and meat.
- Season.
- Add onions, garlic. Add additional oil.
- Lower down the heat.
- Add shrimp paste.
- Add coconut milk. May deglaze the coconut milk container with stock, then add the deglazed coconut milk in the wok.
- Add fish sauce and siling labuyo.
- Season
- Boil then simmer. Make the sauce with body, not watery.
- Add the sigarilyas.
