Ensaladang Talong (Eggplant Salad)

  1. Puncture the eggplant with fork.
  2. Grill the eggplant.
  3. Make a cane vinegar dressing. Just mix cane vinegar, garlic, fish sauce and sugar.
  4. Scrape out the skin of the grilled eggplant. Put the meat of the eggplant in a bowl.
  5. Mix onion, tomato, meat of eggplant, salt and cane vinegar dressing. 
  6. Adjust the seasoning. Chill.
