Waldorf Salad

According to wikipedia:
A Waldorf salad is a fruit and nut salad generally made of fresh apples, celery, grapes and walnuts, dressed in mayonnaise, and traditionally served on a bed of lettuce as an appetizer or a light meal. The apples, celery, and grapes can all be green, which harmonizes the color palette of the dish.
Main ingredients: Apples, celery, mayonnaise, walnuts, grapes
Course: Appetizer

Yield: 1 portion

Portion size: 75g

 

Ingredients:

1/4 pc green apple, rinsed and cut 1/8 inch thick

1/4 pc red apple, rinsed and cut 1/8 inch thick

5 pcs seedless grapes, rinsed, and halved horizontally

1/2 stalk celery washed, scrubbed, peeled, and cut on a 1/8 inch bias

50g romaine leaves, washed, drained, and cut into a bias

2g spring onions, minced

15g walnuts, lightly toasted in the oven or in the oven or in a dry pan

 

Dressing:

1 pc egg yolk

15 ml honey

5g dijon mustard

180ml canola oil

1/2 pc lemon, juiced and zested

tt salt

tt white pepper

Instructions:

A. Mayonnaise 

In a mixing bowl, combine egg yolk, mustard, and honey. Add oil continuously in small amount while whisking to emulsify the mixture.

B. Dressing

Add the lemon juice and zest in the mayonnaise. (Balance between sweetness and acidity). Season. Chill. 

C. Vegetable and Fruits

In a  2 big mixing bowl, coat the dressing in the wall. Add the grapes, apples and celery, then toss in bowl 1,

Add the greens, then toss in bowl 2. Adjust the seasoning.

D. Plate

Assemble on a chilled 12” dinner plate.
