Chocolate Chip Cookies

Yield : 24 pieces

Method: Cookies/ Creaming method

 

Ingredients:

113g butter, room temperature

75g granulated sugar

83g  brown sugar

50g egg

1/2 tsp vanilla

115g all purpose flour

89g oatmeal, ground in a food processor to a powder

1g salt

2g baking powder

4g baking soda

50g walnuts, chopped

80g chocolate chips

Mise en Place:

  1. Wet: vanilla, egg
  2. Fats: butter, brown sugar, granulated sugar
  3. Dry: Sifted All purpose flour, salt, baking powder, baking soda
  4. Toppings: Walnuts, Chocolate chips, oatmel

 

Procedure:

  1. Mix butter, then add granulated sugar and brown sugar in the planetary mixer using paddle attachment
  2. Pour in egg and vanilla in the mixer,  until batter is smooth.
  3. Add dry ingredients fastly to avoid over mixing.
  4. Add toppings; mix.
  5. Flatten and plastic wrap the batter. Chill.
  6. Scoop the batter with ice cream scooper for even shape and size. May use hand gloves.
  7. Pan with silpat.
  8. Oven for 10 minutes at 350F.
  9. Place in a cooling rack.
