Banana Bread

Yield: 1 pc loaf

Portion size: 10 slices

Method: Muffin Method/ Quick Bread

Ingredients:

125g bread flour

4g baking soda

67g milk

5 ml vinegar

67g vegetable oil

125g mashed bananas

27g egg

100g brown sugar

25g white sugar

1g salt

30g chocolate chips

Procedure:

  1. Preparation: Mashed the banana in the mixer; make it brownish. Combine the vinegar and milk for buttermilk. Cut parchment paper.
  2. Mise en Place:                                                                                                                          Dry: Mix flour, sugars, salt. Baking soda

Wet: Mix oil, egg, buttermilk

         Toppings: Banana, chocolate chips

3. Mix the chocolate chips with the dry ingredients. Make a well in the dry ingredients and pour in the wet ingredients. Mix gently to side and center gently until hydrated.

Pour in Banana.  Mix until fully incorporated.

4. Spray canola oil  in loaf pan. Put the parchment paper on the loaf pan. Make sure the parchment paper is soaked with oil and attached to the oiled pan. Pour in the dough in loaf pan.

5. Score the dough using bench scraper soaked in canola oil. Slice the dough vertically.

6. Bake at 350 F for 25 minutes.
