Angel Food Cake

Yield: 1 pc tube pan

Portion size: 12 slices

Method: Cakes/ Meringue

Ingredients:

95g sugar

94g cake flour

250g egg whites

2g cream of tartar

1g salt

125g sugar 

2ml vanilla

1 ml almond extract

15 ml water

 

Mise en place:

  1. wet: water, almond extract, vanilla
  2. Cake flour, sugar, salt
  3. meringue: sugar, egg white

 

Procedure:

  1. Mix the egg white in planetary mixer using whisk attachment, until shampoo stage; then gradually add sugar. Mix until medium peak.
  2. Add in wet ingredients, then add dry ingredients. Mix.
  3. Put in a tube pan. Make a swirl using offset spatula off set spatula to release air pocket.
  4. Bake at 350F for 30-45 minutes.
  5. Cool down by placing up side down.
  6. Put lemon curd on top, then arrange a fruit on top.

How to Make a Lemon Curd

  1. Whisk the egg yolk.
  2. Add in sugar, add in lemon juice and zest
  3. Put in a baen marie, mix.
  4. Add in butter.
