Method: Cakes/ Meringue

Ingredients:
95g sugar
94g cake flour
250g egg whites
2g cream of tartar
1g salt
125g sugar
2ml vanilla
1 ml almond extract
15 ml water
Mise en place:
- wet: water, almond extract, vanilla
- Cake flour, sugar, salt
- meringue: sugar, egg white
Procedure:
- Mix the egg white in planetary mixer using whisk attachment, until shampoo stage; then gradually add sugar. Mix until medium peak.
- Add in wet ingredients, then add dry ingredients. Mix.
- Put in a tube pan. Make a swirl using offset spatula off set spatula to release air pocket.
- Bake at 350F for 30-45 minutes.
- Cool down by placing up side down.
- Put lemon curd on top, then arrange a fruit on top.
How to Make a Lemon Curd
- Whisk the egg yolk.
- Add in sugar, add in lemon juice and zest
- Put in a baen marie, mix.
- Add in butter.
